Fish, whole or in fillets or steaks, can be wrapped up in foil, greaseproof or cellophane with various flavorings such as butter, lemon juice, wine, onion, garlic, herbs, and poached, steamed, baked or deep-fried. All the essential flavors and juices are retained making it one of the best ways to cook fish.

Grilling is a great way to cook sturdier fish such as salmon, tuna, and swordfish. Just be sure that the grill is preheated and is cleaned and lightly oiled so that the fish will not stick to it. The sturdier fish may be cooked with a light coating or without any coating. More delicate fillets should be coated and grilled in a grill basket or grilled on a heavy duty sheet of foil.

Baked Walleye

2 pounds of boneless walleye fillets
Cherry tomato’s
2 cloves of garlic
Chopped green onions
1/3 pound of feta cheese
Mayonnaise

Preheat oven to 350 F. Lightly coat the fish with mayonnaise and place into dish. Place fish into the oven. Saute onion and then add garlic, olives and tomato’s. Cook until the tomato’s collapse. Put the feta cheese on the fillets at the end and cook some more until the cheese melts.
Now top with the veggies and serve.
