Fish is a heart healthy, lean meat which is full of protein and those valuable essential oils. You won't find much heart disease in cuisines which rely on fish. Some of us are unaccustomed to preparing fish, and may shy away from cooking fish, but it is a very tasty and healthy meal that should be prepared often.
Avoid overcooking the fish because overcooking will cause it to taste dry and tough. White fish will change from a translucent color to an opaque color when cooked and will begin to flake when it is done. Fish that flakes too easily is an indication that it may be dry and overcooked.

Here is a great recipe that a friend of mine found and he shared with me and I love it. I hope you do to.
Fish Fillets 1/4 cup milk Green onions 1/3 cup dry white wine 1/3 tsp. paprika 2 tbs Fresh parsley 1/2 cup fine bread crumbs 1/4 cup shredded mozzarella cheese Butter Parmesan cheese Shrimp soup Lemons
Cut fish into half inch cubes. Put the cubes, onion and lemon into a greased skillet. Pour in water to just cover fillets. Bring water to boil – and then reduce to a simmer for 5 minutes. In another pan mix the soup and flour. Next stir in the milk and wine bringing to a mild boil until the mixture thickens. Add mozzarella and parsley. Drain the fish and add to the sauce. Spoon the fish into pastry shells. Combine the parmesan cheese, bread crumbs, butter and paprika. Put mixture over the fish and broil for 2 minutes.
Fish is not only healthy but tasty as well. Most people think that preparing a fish meal is difficult. Also, there is the concern of being able to purchase those that are fresh. Using fish as a main ingredient in a dish is not complicated.
I will give here some tips that would be helpful when you will be buying and cooking fish.
* If you're using wooden skewers, be sure to soak them for 30 minutes before grilling to prevent them from burning on the grill. * Make sure your grill is clean and oiled. * Make sure that the fish is well coated in batter. * Perfectly cooked fish should flake easily and be opaque with just the faintest amount of translucency in the middle.
