Grilled Fish Taco Recipe - Have Fun With It
Marinades are a good way to add flavor and moisture to the fish before cooking. You only need to marinate fish for 30-60 minutes. If you marinate the fish for too long, the acids in the marinade will start to cook and break down the flesh. Lean fish should also be basted during cooking to keep the fish from drying out. Fattier fish, like tuna and salmon don't need basting, but you can baste them to add more flavor.
Some fish, especially tuna and salmon, can be served medium rare. A lot of people don't enjoy fish cooked this way, and serve their fish well done, but the choice is up to you.
I have been cooking fish since I was a child with my Grandfather. I remember going out early in the morning to catch some salmon for the evening dinner. I found a great recipe book that has a lot of the same recipes that he used to use.

Americans tend to eat twice as many fish dinners at restaurants as they do at home largely because they are unsure how to properly prepare fish. Here are some easy and common sense tips about cooking fish at home.
* Try not to thaw frozen fish completely before cooking, or it may make them very dry and mushy. * Never use water from close proximity marinas, municipal or industrial discharges, always use potable water. * A temperature between 350°F and 375°F is an ideal range for deep-frying. The correct temperature can be determined with the use of a candy thermometer. * To thaw frozen fish or seafood, thaw slowly in the refrigerator for 24 hours. * Make sure your grill is clean and oiled.
