Gourmet Fish Recipes - It's The Info You Want
When cooking fish, it's easy to see the degree of doneness. The meat turns white and loses transparency. Just as with a steak, when the fish appears done on one side, you just flip it over until the fish is done, right through to the center. Test with a fork. If you can cut the fish easily with the fork and there are no transparent or fork-heavy sections, the fish is done.
If you want to stop fish from sticking to the pan and therefore breaking up when trying to remove it, a good tip is to place the fish on a bed of celery, onions, or both. This will also give the fish extra flavor.

* Shrimp, Scallops, and chunks of firm fleshed fish work well on skewers. * Make sure that the fish is well coated in batter. * Each serving should be about 6-8 ounces for fillets or steaks, and 8-12 ounces for whole fish.
