Fish Fillets Recipes - Your Recipe Guide

When the weather's not right for grilling, try broiling instead. Broiling is great when you want a fast, simple, and easy preparation with delicious results. It gives fish a nicely browned exterior with the convenience of a temperature-controlled heat source. For easy cleanup, line the broiler pan with a piece of foil.



Another option is to cook your fish on wood. When you cook on a wood fish board, you do not flip the fish because it cooks indirectly. Once your fish is prepared, oiled on one side and seasoned, you need to place the fish board and fish directly on the grill. You can baste the fish during cooking but do not use anything flammable. The board should be over a low fire so as not to ignite.

Here is a Trout Recipe that I enjoy all the time. Give it a try...

4 teaspoons olive oil
8 rosemary sprigs
4 trout
1/2 teaspoon salt
1/4 teaspoon ground black pepper
A few lemons

Preheat oven to 425°F.

Cut 4 sheets of heavy-duty foil about 12-inches square. Spoon olive oil onto the dull side of foil and brush it. Put a sprig of rosemary in the cavity of each fish and salt and pepper generously.

Put each trout on a piece of foil and top with a 1/2 of the round slices of lemon and another sprig of rosemary. Fold the foil loosely over the fish and crimp the edges together tightly. Place the packets on a baking sheet or in a baking dish and bake for 20 minutes.

Have lemon for sprinkling on the fish.


There are many cooking methods, here are some tips on how to make your meals rise up and taste great.

* Cook it as soon as possible to minimize the loss of juices.
* If you don't oil your grill, the fish will stick, and break apart when you try to remove it.

* It is better to undercook the fish a bit than overcooking it.
