There are a number of ways that you can choose to cook your food depending on the type of menu that you are having. Fish is one of the healthiest foods that you can eat or provide for your family. The top three ways to cook fish are usually to grill, fry, or saute. Although these are not the only ways to cook your fish, these seem to be the most efficient ways.
Grilling is a method which is used for whole fish, steaks, fillets and cutlets, and particularly oily fish such as mackerel, salmon and trout. The flesh is usually scored with a knife to ensure even and thorough cooking. The fish should be dotted with butter to prevent it drying out. The grill should be set at a moderate heat, rather than on high, so that the fish does not dry out. The smaller the fish, the higher the grill. Line the grill with foil so that the pan and the rack don't have lingering fish flavors.

Here is a Trout Recipe that I enjoy all the time. Give it a try...
4 teaspoons olive oil 8 rosemary sprigs 4 trout 1/2 teaspoon salt 1/4 teaspoon ground black pepper A few lemons
Preheat oven to 425°F.
Cut 4 sheets of heavy-duty foil about 12-inches square. Spoon olive oil onto the dull side of foil and brush it. Put a sprig of rosemary in the cavity of each fish and salt and pepper generously.
Put each trout on a piece of foil and top with a 1/2 of the round slices of lemon and another sprig of rosemary. Fold the foil loosely over the fish and crimp the edges together tightly. Place the packets on a baking sheet or in a baking dish and bake for 20 minutes.
Have lemon for sprinkling on the fish.
